Ingredients
6 potatoes, peeled
2 cups grated cheese, divided
3 teaspoons salt, divided
4 tablespoons olive oil,
1 sweet onion, diced
500 g ground beef
14 ½ oz diced tomato, 1 can, drained
4 tablespoons fresh parsley, chopped,
1 teaspoon paprika
½ teaspoon pepper
2 cloves garlic, minced
1 cup ricotta cheese
1 cup shredded mozzarella cheese
Directions:
Grate the potatoes and mix with other ingredients. Spread on a baking dish and bake at 356°F (180°) for 30 minutes.
Make the filling: cook all into a pan and heat for about 25 minutes. Then fill and roll the potatoes and cover with cheese. Bake at 356°F (180°) for 15 minutes.
