Recipes:
Chicken Stir Fry Recipe:
Start with a drizzle of olive oil in a large skillet and add in 2 large chicken breasts cut into bite sized pieces. Season with salt, pepper and soy sauce- cook through and remove to plate. Add in 1 sliced onion and 2 sliced bell peppers. Let cook for 3-4 minutes. Add in any extra frozen veggies that you like and 1/4 cup chicken broth to let steam for 4-5 minutes. Once veggies are almost fully cooked, I like to add in a couple shredded carrots and cook for a couple more minutes. Add chicken back in once veggies have been cooked. Stir sauce in and let simmer for a couple of minutes until thicken. Serve with pasta, rice or alone.
Stir Fry Sauce:
1/4 cup broth
1/4 cup sauce
1/4 cup honey
1/2 tsp sesame oil
1/4 tsp ginger
1 tbsp minced garlic
2 tsp cornstarch
Chicken Parmesan:
1.5 cups italian panko
1 cup parmesan
2 tbsp parsley
2 tsp salt
1 tsp pepper
flour
2 eggs with a splash of milk
Mix Panko, parmesan, parsley, salt, and pepper together in a dish. In another dish, place 1-2 cups flour. In a third dish, mix a couple eggs with a splash of milk and whisk together.
Cut chicken in half lengthwise so you are left with thin pieces. Dip the chicken first into the flour, then the egg wash and then give a thick coating of the panko mixture. Place onto baking sheet. Bake at 400 degrees for 20-25 minutes. Broil at end to crisp up. Top with marinara and mozzarella - put under broiler to melt cheese. Serve over pasta.
Stuffed Bell Peppers:
2 peppers, chopped
1 onion, chopped
1 lb ground beef
1 TBSP balsamic vinegar
1 can petite diced tomatoes
1 can tomato sauce
1 cup marinara
1 cup beef broth
Seasonings: italian seasoning, basil, oregano, salt, pepper, garlic powder and sugar
Add a drizzle of olive oil to a skillet with ground beef. Once it is halfway browned, add in peppers and onions- cook through. Add garlic and cook 1 minute more. Add in all of the sauce ingredients and let simmer. Add in 2 cups of cooked rice and stir. Add desired cheese and serve.
Buffalo Chicken Bowls:
2 chicken breasts, cut into bite size pieces
2 TBSP olive oil
1/4 cup buffalo sauce
1/4 tsp paprika
1/4 tsp garlic powder
salt and pepper to taste
Add all ingredients to a bowl and let sit for about 10 minutes. Heat up skillet and add everything in. Let cook until the chicken has cooked through. This chicken can be served in salad, wraps, sandwiches, etc.

Pizza:
Pre bake your pizza dough at 410 degrees for about 7 minutes. Top with your favorite toppings and bake for another 10 minutes.
