In this episode of How to Eat in Peru, we show you how to make Ají de Gallina, a classic Peruvian dish. Last time, we bartered our way through San Pedro Market. Now, we show you how to tame the heat on ají amarillo (Peruvian yellow chili) and put together this comforting concoction of chicken, peanuts, and chili.
Cooking while traveling is a great way to get to know culture, but it comes with special challenges. We originally intended this as a plug for cooking in an Airbnb, but instead it became a bit of a comedy of errors. However, in the end, the end result was more than worth the effort.
