This easy baked sea bass recipe with oven roasted potatoes is a traditional mediterranean diet recipe from the Italian island of Sardegna, where fresh sea bass (also called spigola or branzino) is abundant in the crystal blue waters surrounding the island.
Lulu says we’ll flavor this fresh fish with simple herbs from her garden to let the flavor of this fresh and delicate fish shine through: thyme, garlic, a bit of oregano, some parsley and an ingredient she often uses with fish: fresh ginger!
Assuming you are purchasing your sea bass already cleaned (as they are sold in most groceries), this is a quick and easy dinner or lunch for a special occasion. For instance, it’s perfect for celebrating Christmas Eve (sometimes called the Feast of the Seven Fishes among Italian Americans) since fish and seafood are traditionally served the day before Christmas in accordance with the catholic tradition.
Feel free to make the herbed potatoes or oven roasted tomatoes as a side for another dish—they are delicious by themselves!

sea bass (aka spigola or branzino) - one whole (about 1.5 lbs / 700 g)
yellow potatoes - 3 medium, cut into thick slices
cherry tomatoes - about a dozen, halved
olive oil - drizzle as needed
lemon - one whole (half cut into slices and half juiced)
fine salt - salt fish generously, inside and out
black pepper - to taste
HERB MIX FOR THE SEA BASS
flat-leaf parsley - about a handful
fresh garlic - 3 cloves
thyme - a few sprigs
oregano - 1/2 teaspoon
fresh ginger - 1/2 inch piece
