Coconut Mango Chia Pudding | Tropical Chia Seed Mango Pudding
Ingredients: (serves two)
• Chia Seed Pudding:
• 1/4 cup chia seeds
• 1 cup coconut milk
• 2 tablespoons maple syrup
• 1/2 teaspoon vanilla extract
• Mango Layer:
• 3 ripe mangoes
• Toppings:
• 1/2 cup coconut yogurt
• Coconut flakes (for garnish)
Instructions:
1. Prepare the Chia Seed Pudding:
• In a bowl, combine chia seeds, coconut milk, maple syrup, and vanilla extract.
• Mix well until all the ingredients are fully incorporated.
• Cover the bowl and refrigerate for at least 4 hours or overnight until the mixture thickens and forms a pudding-like consistency.
2. Prepare the Mango Puree and Chunks:
• Peel and cut the mangoes into chunks.
• Set aside one mango’s worth of chunks for topping.
• In a blender, puree the remaining two mangoes until smooth.
3. Assemble the Pudding:
• In a large glass or serving dish, begin by adding a layer of mango puree at the base.
• Spoon the chilled chia seed pudding over the mango layer.
• Add a layer of coconut yogurt on top of the chia pudding.
• Finish with the reserved mango chunks and a sprinkle of coconut flakes for garnish.
4. Serve and Enjoy:
• Serve the pudding chilled and enjoy a refreshing tropical treat!
