POTATO PASTRY
• 5 cups of flour
(add in a controlled way)
• 1 cup measures 200 ml.
• Make a well in the middle of the flour
• 2 cups of water
• 1/4 (quarter) teaspoon yeast
• 1 teaspoon salt
• start kneading the dough
• cover the dough
• and let it rest for 10 minutes
• 10 minutes later
• sprinkle flour on the counter
• put the dough on the counter
• make a large ball of dough
• divide the dough into 6 equal parts
• Make 6 dough balls
• cover the dough balls
• and let them rest for 5 minutes
• 5 minutes later
• roll out the dough balls with a rolling pin (15 cm. diameter).
• Put the dough into 150 grams of melted butter.
•Apply plenty of butter to each dough.
• place the other rolled dough pieces on top of each other in the oil.
• cover the dough
• and rest for 30 minutes

• Peel, chop and boil 4 large potatoes
• mash boiled potatoes
•Melt 50 grams of butter in the pan.
•Sauté 2 medium-sized, finely chopped onions in butter.
Add 1 teaspoon of salt,

Add the sautéed onion onto the potatoes.

apply oil to the counter
put the dough on the counter
and open it with your hand as in the video
Divide the rolled out dough into 4
fold
Add 1 tablespoon of filling ingredients
and shape it as in the video
Arrange the pastry dough on a tray lined with baking paper
•Apply the same process to other phyllo dough.

You can sprinkle sesame seeds on top if desired.
• Bake in a preheated oven at 200 degrees/390 F until the top and bottom of the dough are golden brown.
