Yes hike the narrows and the canyon overlook trail. If I had only one day hiking Zion National Park with elementary school kids I would want to see the whole canyon and do a canyon overlook view so take the Shuttle from the visitors center to the last shuttle stop 9 Temple Of Sinawava, hike the Narrows, take the shuttle back to the visitors center and then drive out the Mt Carmel Tunnel and hike the Zion Canyon Overlook Trail.
these two hikes and the shuttle ride really give families a successful one day trip to Zion. The order doesn't matter as there are pros and cons to either setup. The canyon overlook is a 1 mile round trip hike with limited elevation gain. The Narrows is 10 miles round trip and families can always turn around early any time. The Narrows is amazing right from the beginning, making this hike fun at any length.
