I love making jerky, or anything that preserves the life of a food, and still taste great.
I have been making jerky, biltong, dried fruit, fruit leathers for the better part of a decade.
This is a little informal run through of how i like to make my jerky, when my dehydrator is on the blink. I will just use the oven.
Quick rundown.
Get your cut of beef. I like using a bit of brisket. The reason for this are economics and the fact it's a good cut with a lot of the muscle going against the grain, which makes for an easier chew....in my opinion.
This was around 1kg, or 2.2lbs of beef. It cost around £8.00, which is pretty good.
I cut off most of the fat as that would be the first thing to spoil.
I cut it into 1/2cm strips. You can go thicker or thinner, depending on your taste and drying length.
The Marinade
I use a few things to give the beef jerky a good taste
*Light Soy Sauce
*Worcestershire Sauce
*Hot Paprika
*Garlic Granules
*Honey
*Liquid Smoke
* I also banged some Chilli Infused Pepper into it as well
You don't have to do it this way. you can put whatever flavours you want into it.
Make sure every bit of beef is coated well with the marinade and chill for a few hours in the fridge.
After your beef has relaxed a little, get it out and onto paper towels. dry it off as much as you can and lay it out onto metal racks.
Get it in the oven. I have an electric oven, and just put it on the pilot light or first setting. I also have a thermometer in the front, so i have a good idea of what is happening. It hovered around 100C for about 4 hours or so.
I check it every now and then to see how it's going.
I like it dry, and i mean, leave it in a jar for a few months dry. It doesn't usually last this long.
