Chef Liwei Liao is known as the creator of The Boba Truck, a food truck serving boba that became popular all over Southern California. However, as someone who's been fishing for as long as he could remember, he couldn't take his mind off his true passion.
After selling his company a few years ago, he started The Joint Eatery, a cafe/restaurant and fish market located in Sherman Oaks where he is the Chef Owner.
Chef Liao specializes in dry-aging fish, a process where many top Sushi Chefs and Chefs alike use to take their fish to the next level.
The process involves taking the freshest piece of fish possible, hanging it in a controlled environment, which slowly takes away the blood and water in the fish (which is a breeding ground for bacteria and is the source of that "fishy" smell), elevating the ingredient to its full potential.
All the fish you see in the video above is AT LEAST 7 days old. He will serve fish up to 40 days old sashimi style and his customers LOVE it. Be sure to stop by The Joint Eatery when you get the chance!
