Last week we learned that spices contain two types of oils: Non-volatile oils which provide the aroma and volatile oils which provide the flavor of the spice.
We also learned that these oils are released when whole spices like black pepper are ground. In today's video, we cover another way to release those oils and flavor: HEAT.
