Most of us would love to know how to cook abc soup recipe that's can be done at home easily. Today, I would like to share our family's favourite Abc soup chinese recipe.
Here are the ingredients to cook chinese soup recipes for dinner tonight.
3 carrots medium size
3 red onion medium size
4 potatoes medium size
2 tomatoes medium size
1 tablespoon dried scallop (optional)
7 pieces chicken drummet (** read note below)
2/3 pot of water (pot size i used is 24 cm diameter)
1 to 2 teaspoon salt to taste
Here are the How To make ABC Malaysia chicken soup recipe:-
1) Wash and clean all ingredients.
2) Peel off carrots, potatoes and red onions skin.
3) Cut carrots into an inch size.
4) Cut potatoes, red onions and tomatoes (remember to remove seeds) into quarters.
5) Blanch chicken in hot water but not boiling water and do not overcook it, remove from heat once the water starts to get some form of impurity. This process is to ensure to get clear broth.
6) Rinse the blanched meat with cold tap water to stop the cooking process.
7) Fill the pot with water up 2/3 level and bring it to boil.
8) Add all ingredients including blanched chicken drummet, cover pot with lid and let it simmer for 1 and half hour on low heat. Do check the water level occasionally to ensure it is not dry out.
9) If the water reduces, add hot water to make up to 2/3 water level. Let it simmer for another half hour.
10) Once the meat is soft and tender, it is time to add salt to taste and ready to serve with other side dishes and cooked rice.

In general, I usually cook this soup in the morning for lunch. If there is left over, we will have it for our next meal in case we can't decide whats for dinner tonight.
Sometimes, we do keep the ABC soup overnight as our next day family home cooked meals. All you need to do is bring the soup to boil on high heat for approx. one minute or so without stirring it while it is boiling. Hope this little tips helps.

** Note : Chicken drummet is my personal choice however you can use chicken breast too or other types of meat or bones of your choice. I would suggest you to blanch the meat or bones beforehand to get a clear broth.
