Baked Eggs in Acorn Squash
Ingredients for 2 servings
1 acorn squash
Extra Virgin Olive Oil for brushing
Salt and pepper - a pinch of each
2 tablespoons shredded Swiss cheese
2 large eggs
2 teaspoons grated Parmesan cheese
1 strip cooked bacon, cut or torn into small-ish pieces
1 scallion (green onion), thinly sliced
Split the acorn squash in half and remove seeds. Brush exposed flesh with a tiny amount of olive oil, and sprinkle with salt and pepper. Bake the halves in cut-side-down in the microwave for 8-10 minutes or until tender.
Preheat the conventional oven to 400°F.
Flip the halves so the cut side is up. Add to each cavity 1 tablespoon of the shredded Swiss cheese, 1 large egg, a sprinkling of salt and pepper, and 1 teaspoon of the Parmesan cheese. Top with the bacon pieces.
Bake in the preheated oven until the egg white is set, and the yolk is cooked but not hard -- 12-15 minutes.
Garnish with the sliced scallion.
