Prawn Paste Chicken or Har Cheong Gai is a standard item on the menus of all Zi Char stalls. If ever there is a national fried chicken dish, this will be it. It's crispy and crunchy on the outside and juicy on the inside. And the prawn paste or Har Cheong gives it that unique South-East Asian flavour.
Traditionally, chicken wings are used. But you can also use boneless chicken thighs as well. While you are at it, make a Har Cheong Gai burger. Just like how McDonald's did it.
Ingredients:
1 kg chicken wings
2 Tbsp prawn paste
1 tsp sugar
2 Tbsp oyster sauce
2 Tbsp sesame oil
2 Tbsp Chinese rice wine
1 tsp pepper
150g cornstarch or tapioca flour
