Rajma Tacos, as the title clearly paints the picture, is that common Mexican quick eat, with an Indian twist. Vegetarian tacos include refried beans or black beans, to cover for the bulk that goes in, while this one uses rajma, or red kidney beans.
1) Wash and soak one up of cdried red kidney beans (rajma) or 9 hours, and then pressure cook with some salt to taste, until soft (3 whistles on pressure cooker, or 35 minutes on instant pot).
2) Chop lettuce, onions, tomatoes and cilantro and keep ready.
3) Roughly mash cooled rajma beans and add two tablespoons of taco mix - To make at home, combine chili powder, onion powder, garlic powder, crushed red pepper flakes, dried oregano, paprika, ground cumin powder, salt and pepper, and use two tablespoons of this mix.
4) Add a quarter cup of hot water to the beans, in case it appears dry.
5) Toast up taco shells until slightly warm and crunchy.
6) Fill each taco with a generous amount of bean mixture, and top off with lettuce, onions, tomatoes, cilantro and cheese.
7) Enjoy with taco sauce!
