The Bihari Boti also known as Beef Bihari Kabab is a meat delight that has an infusion of mustard oil, largely used in India, and specifically Bengal and Bihar, and a liberal amount of masala. The use of poppy seeds, nutmeg, mace and papaya as meat tenderisers makes it remarkably tender.

A Pakistani BBQ delicacy, Beef Bihari Kabab are thin strips of beef marinated in s spicy homemade masala. Traditionally they are grilled over charcoal but to make this easy for everyone in this recipe they are cooked in pan.

See how I make my Beef Bihari Kabab

Ingredients:

500g or 1/2 kg of Beef fillet cut into thin strips and flattened using a meat mallet
1 medium onion finely sliced
1/3 cup oil
1/4 cup Greek yoghurt
1 teaspoon:
coriander seeds
cumin seeds & poppy seeds
4 green cardamom pods
3 bay leaves & 5 dried round chilies
1.5 teaspoon salt
1 teaspoon:
garam masala & paprika powder
1/2 teaspoon red chili powder
1/4 teaspoon nutmeg & mace powder
1.5 teaspoon each of garlic & ginger paste
1 tablespoon of raw papaya paste
oil for frying
18cm bamboo skewers
