Falafel Burgers with Vegan Tzatziki Sauce
(Serves 4 to 6)
Ingredients:
2 cans chickpeas
1 seedless cucumber, peeled
1 cup vegan yogurt (We used Kite Hill’s)
½ cup fresh parsley
4 tbsp. AP flour
2 tbsp. olive oil
2 tbsp. minced garlic
1 tbsp. fresh mint
1 tbsp. fresh dill
1 tbsp. egg replacer (We used Trader Joe’s brand)
1 tbsp. lemon zest
2 tsp. cumin
1 tsp. cayenne
1 tsp. lemon juice
Salt and pepper to taste
Directions:
To make falafel, add chickpeas, parsley, flour, olive oil, minced garlic, egg replacer, lemon zest, cumin, cayenne, lemon juice, and salt and pepper to food processor, and pulse until there are no whole chickpeas. You do not want to mixture to be too smooth, as it will be harder to form into patties. Place mixture in fridge for 1 hour.
While the falafel mixture is in the refrigerator, make the tzatziki by adding the cucumber, yogurt, mint, and dill to blender and blend until smooth.
Build your burgers and top with vegan tzatziki sauce!
