A lamington is an Australian cake made from squares of butter cake or sponge cake coated in an outer layer of chocolate sauce and rolled in desiccated coconut. The thin mixture is absorbed into the outside of the sponge cake and left to set, giving the cake a distinctive texture.
Ingredients :
For Sponge cake -
Curd - 1 Cup
Powdered Sugar - 3/4th Cup
Refined Oil - 1/2 Cup
Vanilla Essence - 1 tsp
Baking Powder - 1 tsp
Baking Soda - 1/2 tsp
Salt - 1 pinch
For Chocolate Syrup -
Powdered Sugar - 1 Cup
Coco Powder - 1 tbsp
Ghee/ Butter - 1 tsp
Hot Water - 2 tsbp
For Coating
Desiccated coconut - 1 Cup
Keep cake in refrigerator for 30-40 minutes and Then its ready to use.
