This corn and tomato salad is one of my favorite corn recipes to make! I look forward to making it every year because it's so refreshing and flavorful. It's full of fresh garden tomatoes, sweet corn, creamy avocado, and a homemade basil vinaigrette. I find it to be such a crowd-pleaser whenever I serve it to my family and friends! INGREDIENTS
2-3 corn on the cobs it should amount to about 1 heaping cup of corn
2 cups tomatoes, sliced for bigger tomatoes or halved if they're cherry tomatoes
1/3 cup red onion, sliced or diced
1 avocado, pit removed and sliced
Basil Vinaigrette
1/2 cup extra virgin olive oil
1/3 cup red wine vinegar
3/4 teaspoon garlic powder, or one large garlic clove finely minced or pressed
1 Tablespoon honey or maple syrup
3 Tablespoons fresh basil, finely chopped
generous pinch of black pepper and salt
