~'AIR FRIED' GARLIC SMASHED POTATOES~
//RECIPE//
- 1 lb baby potatoes
- 1 stick butter
- 5 large cloves of garlic (minced)
- 1/2 tsp salt & pepper
- 1/4 cup oil ( I used a garlic infused olive oil)
- parsley for garnish *optional*
//INSTRUCTIONS//
Put potatoes into a medium sized bowl, pour oil on top and work into the potatoes. ( I used gloves and rubbed the oil onto all of them) Next, lay the potatoes out onto the sheet pan that comes with the Ninja Foodi XL Pro Air Fry Oven. Cook on rack level #3 on the 'Bake' setting on 450°. Set time for 25 minutes but allow 5 minutes for the oven to preheat before adding in potatoes). Once time is up, remove sheet pan, set onto counter or cutting board. Using the bottom of a glass, mug or potato masher push down onto the potato until it is smooshed (flattened) to your liking. Continue with all the potatoes. Next, sprinkle salt & pepper. Microwave your butter stick and minced garlic together about 45 seconds or until fully melted. I also pour in the remaining oil from the bowl I tossed the potatoes in) Mix well, and now you can either pour straight over or brush on potatoes with a basting brush (works best). Sprinkle on some parsley for the finishing touch. Set the Oven to 'Air Fry' on 450° for 16-22 minutes. Keep an eye, and remove when they have gotten crispy to your liking. *Tip* Add bacon, grated parmesan cheese and scallions for added flavor. Serve with sour cream or alone. Enjoy! :)
