Eggs and tomatoes go so well together and also happen to reach peak abundance in the summer! After eating tons of tomato salads and making a nig batch of sauce I still needed a way to make use of all these tomatoes. Eggs in purgatory is my new egg consumption addiction, its so easy to put together and takes poached eggs to a new level! Garden tomatoes turn into a rich thick sauce that is begging to be soaked up with by a piece of fresh bread. The fresh herbs and rich butter and parmesan really take this dish to another level and I highly highly recommend everyone try it!
