BAKED POTATO SOUP
5 medium russet potatoes, peeled and diced
1 medium yellow onion, peeled and diced
2 carrots, peeled and diced
8 slices bacon, cooked crisp (reserve 2 Tbs bacon grease)
6 cups chicken stock or vegetable broth
3/4 cup milk
2 Tbs all-purpose flour
1/2 cup half and half cream
dash of Sriracha
salt and pepper to taste
Toppings: shredded cheddar cheese, sour cream, green onions
In a dutch oven on stovetop, heat reserved bacon grease then add diced onions and carrots. Cook 5 minutes until tender. Add diced potatoes and cook another 5 minutes. Season to taste with salt and pepper. Add chicken stock and bring to a slow boil. Boil for 10 minutes or until potatoes are tender. In a separate bowl, whisk flour into milk. Once flour is dissolved, slowly and gently whisk milk into soup. Cook for another 5 minutes. Turn off heat and using a potato smasher, mash the potatoes in the dutch oven to the thickness and consistency you prefer. Add a dash of Sriracha (if desired). Slowly add half and half cream and stir will. Turn heat on low and warm soup for 2-3 minutes. Serve immediately with toppings.
