Back once again to the Philippines 🇵🇭 to make Sinigang na baboy. A comforting soup dish that's full of vegetables and porky flavor, this oddly tastes quite similar to some of the soups I grew up eating but we never used tamarind in it, it was usually soured with fermented or preserved vegetables at home. If you're not too strict about making it traditionally, I can see this as a perfect way to use up whatever vegetables you have in the fridge
1kg of pork(ribs/belly)
2 tomatoes, sliced into quarters
1 large onion, sliced into quarters
3 tablespoons of fish sauce
2kg water
3 tbsp tamarind pulp, boiled into 1/2 cup of water and strained into soup
- This is the base soup and you can then add the vegetables you have on hand like okra, taro, long beans, radish, eggplant are all pretty common additions
