kadhi Pakora with Zeera Rice
Ingredients for Pakora Mixture:
Potatoes (thin strips) 1 cup
Onion (Julienne) 1 cup
Green Chilies (chopped) 1/4 cup
Spinach (shredded) 1 cup
Gram flour 1 ½ cup
Salt to taste
Dry coriander (crushed) 1 tbsp
Red Chili Powder 1 tsp
Turmeric Powder 1/2 tsp
Garam Masala Powder 1/2 tsp
Water as required
Oil (for frying) as required
Ingredients for Lassi Preparation:
Yogurt 750 g
Gram flour 1 cup
Lemon Juice (optional) 1 tbsp
Water 1 L
Ingredients for Tarka:
Oil 1/4 cup
Cumin seeds 1 tsp
Red chilies (whole) 4-5
Curry leaves 6-7
Ingredients for Curry:
Oil 1/2 cup
Onion (sliced) 1 cup
Water 1 cup
Ginger garlic paste 1 tbsp
Red Chili Powder 1 tsp
Turmeric Powder 1 tsp
Prepared Gram flour & Yogurt Mixture
Salt to taste
Water (if required)
Fried Pakoras as required
Prepared tarka
Fresh Coriander (for garnish) as required
Ingredients for Zeera Rice:
Guard Basmati Rice 2 cups
Water (for soaking) as required
Oil 1/4 cup
Cumin Seeds 1 tsp
Cloves 4-5
Water (for boiling) 4 cups
Salt to taste
Soaked Rice 2 cups
Green Chilies as required
Vinegar 1/2 tbsp
Directions for Pakora:
Add all potatoes, onion, spinach, green chilies, salt, red chili powder, garam masala, crushed coriander, turmeric powder, and gram flour in a bowl and mix until well coated.
Now gradually add water while mixing constantly until desired consistency of your pakora batter is obtained. Let it rest for 20-30 minutes.
Now, in preheated oil, add small portions of pakora and deep fry until fully cooked. Stain and set aside.
Directions for Lassi:
In a bowl add yogurt.
Note: At this point if your yogurt is not sour add lemon juice and whisk thoroughly and set aside for 3-4 hours.
Now, in this yogurt add gram flour and whisk until no lumps are left. Then add water and whisk into lassi. Set aside.
Directions for Tarka:
Now, to prepared tarka, heat oil in pan and add cumin seeds, red chili wholes, and fresh curry leaves. Pour this tarka into the prepared curry and mix. Take the curry off the flame.
Directions for Curry:
Heat oil in a pot and sauté onion until starts to get brown. Add a little quantity of water and cook for 2 minutes. Add ginger garlic paste and cook for another 2 minutes.
Add turmeric powder and red chili powder and cook for 4-5 minutes.
Pour prepared lassi into this masala and cook it for 1 hour or until it thickens while continuously stirring preventing from sticking to the base. Add water if required.
When the curry has thickened according to the desired consistency, add salt and mix again.
When oil separates, add prepared pakoras and give it a good mix.
Directions for Garlic Rice:
Soak rice in a bowl as per instructions on the pack.
Heat oil in a pot, add cumin seeds and sauté. Add Cloves and sauté for a minute.
Add water, salt, vinegar and let it boil for a moment. Add soaked rice and simmer until 80% water evaporates.
Garnish with chilies and cover with lid and steam for 8-10 minutes.
Serve curry with Rice.
