How to: Grill a Steak on a Stove Top
- Rest meat at room temperature for 30 minutes
- Pat the steak dry with a paper towel.
- Rub the steak with a light coating of olive oil
- Just before cooking, season the meat evenly with salt and pepper.
- Use a grill pan that is comfortable enough to fit your steak
- Heat the pan over medium-high heat.
- Add the steak, and let it cook, undisturbed, without moving it around.
- Ensure full and complex flavors by letting the meat grill to a deep carmelized brown crust.
- Flip the steak
- Rare = 3 minutes on each side
- Medium rare = 4 minutes on each side
- Check for doneness by using an instant read thermometer or by touch.
- To gage by touch, press the steak with a pair of tongs, the amount the meat gives indicates how done it is. The softer the meat, the rarer it is. The firmer the meat, the more well done.
- Let the steak rest after cooking for a few minutes to let the juices to redistribute. The meat will continue to cook a few degrees when resting, so remember to allow for this when deciding to rem
