One Pot Turmeric Chicken
Serves 4
Ingredients
2 tablespoons olive oil
4 boneless chicken thighs
1 medium onions, finely chopped
3 garlic cloves, minced
1 cup basmati rice, rinsed
1 teaspoon ground turmeric
2 cups chicken or vegetable stock
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup frozen peas
1/2 cup yellow corn
Limes quartered, for serving
Method:
1. Heat olive oil in a large skillet over medium-high heat. Add chicken skin side down, and cook undisturbed for about 6 to 8 minutes.
2. Flip the chicken pieces and cook on the other side until browned, about 2-4 minutes. Remove the chicken from the pan and set aside.
3. Spoon some of the fat from the skillet. Reduce the heat to medium, add onions, and sauté for about 3 to 4 minutes. Add garlic and sauté for 1 minute.
4. Add rice and cook stirring until the rice is glossy and coated with oil. Add turmeric and give a good stir.
5. Add stock, salt and pepper and stir gently to combine. Return chicken to the pan, cover and reduce to a simmer and cook undisturbed for 15-18 minutes.
6. Uncover and check. remove the chicken out of the pan and fluff the rice with a fork. Return chicken to the skillet, arrange lime wedges.
