Monday
Strawberry Protein smoothie - 3 strawberries, 1/2 banana, one tbs peanut butter, 1 cup water, 2 scoops of OWYN protein powder
Chicken salad: shredded chicken, 1 cup Greek yogurt, celery, apple, garlic salt, onion salt
Marry me chicken: Chicken recipe:
1. Cut 1/2 onion, 1/2 red bell pepper, 1 jalepeno
2. Cut 1 lb of chicken, season with olive oil and chicken rub.
3. In a pot with olive oil, sautee onion & peppers for about 1-2 minutes on medium heat.
4. Add chicken to pot and sear for 5-7 minutes.
5. Add about 1/4 cup of chicken broth to pot.
6. Add two tablespoons of tomato paste (I substituted with Italian Bomba paste from Trader Joe’s).
7. Add additional seasoning (optional step).
8. Cover pot until chicken broth reduces.

Kale and Salmon salad: Kale (rub in a little olive oil), Salmon, couscous, breadcrumbs, feta, tomato, lemon (dressing of choice)
Yogurt bowl: 3/4 cup of Greek yogurt,
Top with: blueberry glaze (1/4 cup blueberries, half lemon zest, half lemon juice, 1 tbsp honey - heated), fresh strawberries, vanilla almond granola
Wednesday
Blueberry smoothie: 1/4 cup blueberries (add more for more intense purple color lol), 1/2 banana, one tbs peanut butter, 1 cup water, 2 scoops of OWYN protein powder
Burger without the bun: ground turkey (seasoned with hamburger seasoning).
1.Cut 1/2 onion, 1/2 bell pepper, 1 jalepeno, 3 Yukon potatoes.
2. 1 lb of ground turkey, season with hamburger seasoning.
3.Drizzle olive oil on potatoes and place in oven at 400 degrees for 35 minutes.
4.Secret sauce: 3/4 cup Greek yogurt, tbsp ketchup, tbsp mustard, a splash of pickle juice, garlic salt to taste
5. In a pot with olive oil, sautee onion & peppers for about 1-2 minutes on medium heat.
6.Add turkey to pot and sear for 5 minutes.
7.In a casserole dish add potatoes, turkey, secret sauce, pickles, one cup of diced tomatoes (stir) top with cheese and bake in oven (400 degrees) for 10 minutes.
Thursday
Kodiak Blueberry Lemon Muffins (I added a little extra milk to thin it out a bit)
Chicken wings seasoned in a little olive oil and Famous Dave’s chicken rub. Grilled then tossed in H-E-B Mango Habenero Wing Sauce.
Arugula salad: arugula, cucumber, tomato, feta, cilantro, lemon, olive oil, Italian seasoning.
Friday
Tortilla soup: onion, jalepeno, shredded chicken, chicken broth, tomato sauce, black beans, corn, cumin powder, chili powder. Boil for 30-45 minutes.
Top with: cheese, tortilla chips, cilantro.
