*Chicken Hiway Karahi Recipe*
*Ingredients:*
- Chicken: 1kg
- Tomatoes: 4-5 large, chopped
- Ginger Garlic Paste: 2 tablespoons
- Salt: 1 to 1 1/2 teaspoons
- Roasted and crushed coriander seeds: 1 tablespoon
- Roasted and crushed cumin seeds: 1 tablespoon
- Red chili flakes: 1 1/2 tablespoons
- Garam Masala: 1 tablespoon
- Dried Fenugreek leaves: some
- Coriander: some, chopped
- Green chilies: 5-6, whole
- Oil: 2 cups
*Instructions:*
1. First, heat 2 cups of oil in a pan and fry the chicken for 10-12 minutes until it's well cooked. Remove the chicken from the oil.
2. Use 1/2 cup of the same oil for the rest of the recipe.
3. Add 2 tablespoons of Ginger Garlic Paste to the oil and sauté for 2 minutes.
4. Add the chopped tomatoes and sauté for a few minutes. Then, cover the pan and cook on low heat for 6 minutes.
5. Check if the tomatoes are tender, then add the fried chicken back to the pan. Cover and cook on slow heat for 3-4 minutes.
6. Remove the cover and sauté for 1-2 minutes.
7. Add salt, roasted and crushed coriander seeds, cumin seeds, red chili flakes, Garam Masala, and dried Fenugreek leaves. Sauté for a few minutes.
8. Add some chopped coriander and green chilies, cover, and cook on slow heat for 4-5 minutes.
9. Serve hot and enjoy with naan!
