Mushroom Smothered Cheddar Burger
Ingredients/Cost:
1 lb ground beef: $5.00 @butcherboymarket
10 oz mushrooms: $2.50
1 egg: $0.25
1/2 cup shredded cheddar cheese: $0.55 @cabotcreamery
2 slices bread: $0.25
2 cups spinach: $1.40
1 cup beef stock: $0.50
2 tbsp chili oil: $1.00
1 tbsp oil: $0.05
1 tbsp flour: $0.05
Salt/garlic powder/onion powder: $0.25
Total cost = $11.80 or $5.90 per serving

Prep time ~10 minutes
Cooking time ~20 minutes
Serves 2
1. Combine the ground beef, egg, salt, onion powder & garlic powder. Mix to combine and then form into two burger patties.
2. Place a pan on the stove over medium to medium-high heat and add the 1 tbsp of oil. When the oil is hot, place the burger in and cook for ~4-5 minutes on the first side. Flip over and spoon 1 tbsp of chili oil (optional) on top of each burger, and then place 1/4 cup of shredded cheese onto each burger. Cook for another 4-5 minutes or until done. If needed, cover the pan and add a bit of water to help create steam to melt the cheese.
3. While the burgers cook, wash and slice the mushrooms and toast the bread. When the burgers are done, remove them from the pan and set aside to rest. Add the mushrooms to the pan along with some more salt, onion powder and garlic powder. Cook for ~3-4 minutes and then add the flour and mix into the mushrooms. Cook for another ~1-2 minutes and then add the beef stock. Cook for ~5 minutes or until the sauce thickens a bit, then mix in the spinach and turn off the heat.
4. Place the toast on the plate, top with the burger, then pour the mushroom & spinach sauce over the burger. Serve with your favorite sauce (I used gochujang which is like a spicy ketchup) and enjoy.
