KIWI & BANANA GREEK YOGURT CAKE – NO BAKE CHILLED DESSERT

No bake chilled dessert is perfect way to indulge in some light and airy dessert, that are simple and good to taste.
Fast and easy and made with your favorite flavor of Greek yogurt. Healthy too!
Ingredients
• 200g cookies
• 1/4 cup (70g) melted butter
• 4 kiwis
• 2 bananas
• 70g sugar
• 500g greek yogurt
• 6 gelatin leaves
• juice of half lemon
Preparation
Line a 7 inches (18cm) springform tin with baking parchment and set aside. Add the cookies to a freezer bag and crush with a rolling pin until you get fine crumbs. Mix with the melted butter, add to the prepared tin and press to the bottom to get an even layer. Put cut bananas on the cake. Place in the fridge until needed.
For the filling place the gelatin in a small bowl. Pour the cold water over the powder and stir to combine.
Cleaned and cut kiwis into cubes. Combine kiwi, lemon juice and sugar. Cook over medium heat for 2-3 minutes and then cool.
Mix the yogurt and kiwis mixture in a bowl until well combined. Add the soaked gelatin leaves to a small saucepan and heat up gently. As soon as the gelatin has melted, add this mixture with the yogurt filling and mix well.
Pour into the springform tin on top of the base and smooth out the top. Place in the fridge and let cool for about 3-4 hours.
Remove the prepared cake from the mold and carefully remove the parchment.
Top with kiwi and banana slices before serving.
