Wild garlic season only lasts for a few months, but this pickled wild garlic bud recipe enables you to preserve and ferment these incredible flavours for a later date. A simple pickling recipe is used to submerge the flower buds, which can then be kept in a sterilised jar. Perfect for preserving for scattering over salads or stirring into sauces or cooking. This is an incredibly versatile and simple recipe which utilses the complete plant, including the stalks and buds, prior to flowering season.

INGREDIENTS
batch wild garlic buds
50g cider vinegar
50g water
50g sugar
1tsp pink peppercorns
1tsb coriander seeds
1tsp juniper berries
1 pinch of salt
Preparation (10 mins)
1. Begin by preparing the simple pickle. Place the sugar in a pan with the vinegar and water, then bring to a boil, stirring to dissolve the sugar. Add the pink peppercorns, spices and add pinch of salt, then leave to cool.
2. Finally place the wild garlic buds in a sterilised jar and pour the pickling liquor over the top. Seal the jar and leave to pickle in the fridge for at least a few days to a week. Eat within six months.
