Easy, homemade lemon curd recipe! This tastes so much better than store-bought lemon curd. RECIPE BELOW!

Ingredients
3 large eggs
1 cup granulated sugar
½ cup lemon juice
¼ cup unsalted butter, cold and cut into cubes
1 tbsp lemon zest
Directions
1. Place a pot over medium heat and add the eggs, sugar and lemon juice. Whisk until blended, then add the butter and lemon zest.
2. Cook, whisking constantly, until the mixture has thickened and coats the back of a spoon.
3. Transfer to a bowl, cool for 10 minutes, then chill in the fridge. Enjoy!
