Today is all about my favorite fall vegetable--KABOCHA SQUASH! I'll show you the easiest way to cut it (safely), a few different ways to cook it, and two delicious vegan and gluten-free recipes using kabocha squash.
Plus, once you know how to cook it, you can also easily use kabocha squash puree as a canned pumpkin puree alternative (it's MUCH better)!

*Roast at 400F/200C for 30-35 minutes

*Roast at 400F/200C for 40-60 minutes (40-45 minutes for small, 60 minutes for a large one)
