If you want the best of both worlds, and a dessert that is packed with vitamins, minerals, fibers, and antioxidants; Try the delicious Butternut Squash Dessert. You will become addicted! It is my favourite dessert, especially in the Autumn and Winter, when the fruit is most fragrant!

Ingredients
2 large (~3 kg whole; ~1700 g cleaned) butternut squash*
5 cup (1 kg) sugar
2-4 cinnamon sticks
10-15 cloves
(*) Choose long-necked butternut squash to provide more proper pieces for your dessert
Directions
PREPARATION
Thoroughly wash the butternut squash before cutting and peeling.
Slice the neck into 2-3 cm thick rounds
Its original form and texture allow you to easily create the perfect portion size and form for your dessert
Peel the skin and place the rounds into a wide and shallow pot
I will use the bulb to create small decorative flowers, you can put it in soups or pastries instead
I used a fruit cutting tool to form thin flowers from the bulb
You can form any figures (leaves, rounds, strips) using any available kitchen gadgets or knife
Place the small pieces on top of the solid rounds for cooking them evenly
Place the cloves and cinnamon sticks into the empty spaces in the pot
Cover all the ingredients with 5 cups of sugar. You can adjust the amount of sugar. However, make sure using enough sugar
(All the fruit desserts easily turn to a puree if they are cooked with very little sugar)
Cover the pot with a lid and leave overnight (minimum 6 to 10 hours)
Note: If you don’t want to weight a night, alternatively, you can immediately place the pot on the stove at very low heat until enough juice collects at the bottom then start your regular cooking process
This technique provides cooking the dessert with its own juice and improve the taste
COOKING
Once the juice of the butternut squash is released, place them on the stove at medium heat
When the juice boils, crack the lid and reduce the heat to medium low
Then, cook for 80-90 minutes, until the bubbles on the surface become transparent
Turn off the stove and let the dessert cool down to room temperature in the pot
Then, chill the pot in the fridge
SERVING
The Butternut Squash Dessert is served cold
The best companions to this dessert are tahini, walnuts, and kaymak / cream
You can decorate your serving plate with any sauce or nut additions. I used tahini, as it is tradition
Butternut squash is a very tasty pack of vitamins, minerals, and antioxidants with loads of fiber!
Traditionally, it is done by white-skinned pumpkins of Anatolia.
I discovered that the Butternut Squash in North America perfectly replaces that pumpkin in taste and texture!
