Here is an updated what I eat in a week video with all of the foods and meals I’ve been loving lately and how I’m thing to meal prep a little and be smarter about my time when it comes to cooking.
Lentil Minestrone Soup
2 carrots
2 cups of different colors bell peppers
1 celery stick
1 leek
1 medium onion
5 garlic cloves
1/2 to 3/4 cup of red lentils
1 1/2 cans of crushed tomatoes
3-4 cups of water
1-2 tbsp dried thyme
1 1/2 veggie/chicken bouillon cube
Olive oil

6 garlic cloves
1 1/2 inch of fresh ginger
3-4 shallots
extra firm tofu
1 tbsp corn starch
Avocado oil
2 tbsp Dijon mustard
2 tbsp coconut aminos (or soy sauce just 1 tbsp and to taste)
2 tbsp rice vinegar
