20 minute meal plus how I stay on track is what I will be sharing with you today. I will share with you the four things I prioritize to stay on track for weight loss. The full recipe is below
INGREDIENTS
1 16 ounces package extra firm tofu divided into 4 pieces seasoned with salt and pepper
2 limes, you will need the juice and zest
2 T maple syrup
2T coconut aminos or soy sauce
1 1/2 cup veggie broth
2 T cilantro
1 1/2 T corn starch
1 1/2 T water
Salt and pepper
1 cup rice prepared to package directions
16 ounce frozen broccoli steamed
INSTRUCTIONS
Start your rice cooking
Add the 4 pieces of tofu into a preheated non stick pan on medium heat. Cook for 4 minutes on each side and then 1 minute on each of the smaller sides. Remove from pan.
Add 1/2 the broth to degalze the pan. make sure you get all those little bits, lots of flavor there.
Add the rest of the broth. Add half the zest and half the line juice and mix well. Next mix the corn starch and water to make a slurry and add to the simmering broth and mix well. Cook for 1 minute until it thickens. Add the tofu back in and spoon over the tofu and let simmer for 1 minute. Add the cooked rice to a bowl and add the other half of lime juice, zest and some cilantro and mix well. To plate you will make half your plate broccoli and the other half will be 1/2 cup rice and one piece of tofu pour some of the sauce over rice and garnish with more cilantro.
