Tropical Salsa Salmon
Ingredients:
4 Pier 33 Gourmet Salmon Portions (with or without skin)
2 tbsp. ketchup
¼ cup pineapple juice
¼ cup white vinegar
½ cup chopped pineapple
½ cup diced red pepper
¼ cup chopped cilantro
½ cup chopped white onion
Lime juice
Salt and pepper
1 tbsp. butter
Preparation:
1) Sprinkle salt and pepper on the salmon portions
to taste
2) Pan fry the salmon portions, 4 minutes per side (using
1 tsp. of butter)
3) Mix all the salsa ingredients in a bowl
4) Serve salmon portions over rice, couscous, quinoa,
bed of leafy greens, or side of your choice.
Top with 4 tbsp. of salsa and enjoy!
