For a "as close as you're going to get to" zero touch deployment of Mac computers, creating, systematically, the end user's account and also an admin account on the end device systematically is the last piece of the puzzle. Getting this set up should take you seconds!
A few caveats, though:
If you're going to assign end users to their own computers in the ADE page in Meraki Systems Manager, then great, but if you're going to use authentication, like Azure, Okta, Duo SSO, etc, then make sure you've got the right mapping to user name, else you end up creating an account, like I did, where the email address is also the account name! Not the end of the world, but something to be mindful of
