A quick and easy stir-fry prepared with breadfruits to make your boring dinners a little more interesting!
BREAD FRUIT STIR FRY
Ingredients
500 grams breadfruit (neer phanas), peeled and cut into 2 inch thick strips
2 tbsps oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp split skinless black gram
2-3 dried red chillies
2-3 green chillies
1 medium onion, sliced
1 medium tomato, sliced
10-15 curry leaves
Salt to taste
1 tsp red chilli powder
½ tsp turmeric powder
1 tbsp chopped fresh coriander leaves
Method
1. Heat oil in a non-stick wok. Add mustard seeds, cumin seeds, split skinless black gram and dried red chillies. Sauté for 1-2 minutes.
2. Add green chillies, onion and tomato and mix well. Cook for 1-2 minutes.
3. Add curry leaves and salt and mix. Continue to sauté for 1-2 minutes.
4. Add red chilli powder, and turmeric powder and mix well. Cook for 1 minute.
5. Add breadfruit and sauté for 1 minute. Cover and cook for 10-12 minutes.
6. Add coriander leaves and serve hot.
