11:23 Day 4 Sweet potato meatballs
*** Focaccia (for 1 tray) ***
- Flour 500g
- Salt 6g
- Yeast 3g
- Water 450ml (about 40°C)
Toppings
- Olive oil 2 tbsp
- Salt
- Rosemary (or other herb. I used oregano)
1. Mix flour, salt, and dry yeast.
2. Add water.
3. Mix with a spatula until the mixture is smooth and comes together.
4. Cover the bowl and place it in a warm place for 20 minutes. (I put warm water in a deep frying pan and put the balls in it.)
5. After 20min, mix the dough with spatula about 10 times. Cover and place it in the warm place again for 30 - 40min.
6. Transfer the dough to a parchment-covered baking tray.
7. Secondary fermentation. Place the tray in a warm place for about 20 to 30 minutes, or until it doubles in size. Cover it to prevent it from drying out.
8. Poke your fingers, pour olive oil and sprinkle with a pinch of salt and herbs.
9 Bake in a oven at 390F for about 20-25 minutes until golden brown.
