Watermelon Pride Pizzelle 🍉🏳️🌈
Traditionally, these cookies are flavored with anise, and in my personal recipe I add even MORE anise. But, this batch I made at the request of my partner. Instead of adding anise to the dough, I added super concentrated watermelon extract. And let me tell you, they turned out so delicious!
MY TOP TIPS FOR MAKING PIZZELLES
🏳️🌈 For a crispier and more flavorful cookie use an oil based recipe over ones that contain butter.
🏳️🌈Use a piping bag to transfer your batter onto your iron. This cuts down on the mess!
🏳️🌈It’s all about the timing. When the sound of sizzling from my iron slows, that is how I know my cookies are ready to go.
🏳️🌈DO NOT stack your cookies until they are entirely cool. The steam from the cookies will get trapped and prevent you from getting that perfectly crispy finish.
🏳️🌈After your pizzelles have come off the iron and have had a minute on a cooling rack, spread them out on a baking sheet and bake at 220F for 30 minutes in the oven. This will dry them out and ensure you’ll get that perfect snap.
