This is a very healthy delicious recipe for red leafy amaranth. Red amaranth is called as tambdi bhaji in Goa. The leaves and stalks are red/dark pink in Goa. Most other places in India or abroad the leaves/stalks are more green with only tint of red or dark pink.
This patal ie curry style recipe is made using toor dal and coconut with mild spices. It is served as a side along with rice/dal or fish curry/rice. The addition of vodyo(dried white pumpkin/ashgourd balls) is totally optional. But I love adding these as they enhance the taste of the bhaji and takes us back to our Goan roots.
