How to make Siew Pau / Char Siew / Cha Siu Bao / Char Siu Meat puff!!!
如何制作烧包!!!
Char Siew Meat Puff (Siew Pao)
Filling:
2 tbsp Oil
4 slices ginger
4 cloves garlic (Chopped)
2 onion (chopped)
220g chicken meat/pork (diced)
200g chicken meat /pork (minced)
80g green pea
Seasoning:
2 tbsp oyster sauce
2 tbsp soy sauce
1/2 tsp salt
3 tbsp sugar
1 tbsp Black sauce/ dark soy sauce
1/2 tsp sesame oil
2 tsp toasted sesame seeds
2tbsp flour + 100ml water(mixed well)
Water dough
400g all purpose flour
100g butter
3 tbsp sugar
180 ml water
1tsp baking soda
1/2 tsp salt
Oil dough
200g all purpose flour
140g butter
For glazing and decoration:
2 eggs ,beaten.
some toasted sesame seeds
Method:
1. Heat up oil , stir fry ginger until fragrant . Remove from pan.
2. Stir fry the chopped garlic and onion until onion soften , add in Diced meat and minced meat.
3.Add in seasoning and stir until thick.
4. Water dough : Put all purpose flour , sugar , baking soda and salt into a mixing bowl and mix well. Add in butter and water , knead into a soft dough . Leave it aside to rest for 30 minutes. Divide into 24 portions.
5. Oil dough : Put all purpose flour and butter in another mixing bowl , mix into a dough. (Don't over knead the dough) . Leave it aside to rest for 30 minutes. Divide into 24 portions.
6. Wrap oil dough in water dough , roll up twice as shown in video . Rest for 20 minutes.
7. Roll the small dough into a flat round shape and wrap in some filling. Arrange onto a baking tray. Glaze the puffs with beaten egg . Bake in preheat oven at 170c for 15 minutes .
8. After 15 minutes , take out the puff , glaze with beaten egg again and sprinkle sesame seeds on the surface. Bake again for 15 minutes or until golden brown.

馅料:
2 汤匙食油

4瓣蒜头(切碎)
2粒大葱(切碎)
220克鸡肉/猪肉 (切丁)
200克鸡肉/猪肉(切碎)
80克青豆

2汤匙蚝油
2汤匙酱油
1/2 茶匙盐
3汤匙糖
1汤匙黑酱油/晒油
1/2 茶匙麻油
2茶匙炒香的芝麻
2汤匙面粉+100毫升水 (拌均)
水面团:
400克面粉
100克牛油
3汤匙糖
180毫升水
1茶匙苏打粉
1/2茶匙盐
油面团:
200克面粉
140克牛油
涂抹和装饰用途:
两粒蛋 (打散)
适量炒香芝麻
做法:
1. 烧热油,爆香姜片。取出。
2.爆香蒜米和大葱碎,加入肉丁和肉碎。
3.加入调味料,青豆。炒至浓稠。
4.水面团:将面粉 ,糖, 苏打粉 , 和盐拌均。加入牛油和水,揉成面团。休面团30 分钟,分成24份。
5.油面团:将面粉和牛油混合揉成面团(不要揉过度)。休面团30分钟。分成24份。
6.用水面团包入油面团。擀成长形,卷起(重复两次),参考视频做法。让擀好的面团休息20分钟。
7.将小面团擀成扁圆形,包入馅料。排放在烤盘上,搽一层蛋液。以170°c预热烤箱烤15分钟。
8.15分钟后,将烧包从烤箱取出,再搽上一层蛋液和撒上一些炒香芝麻。接着放入烤箱烤15分钟或至金黄色。
