How to skin fish, how to skin A fish, how to FILLET a fish, however you wanna say it, Myk Walton shows you how to remove the skin from a fish fillet (of halibut).
First tip: If you don't want the skin, just ask the butcher to cut it off for you when you're buying it.
Second tip: Be sure to sharpen your knife before even attempting.
Third: Find the lip (that's what she said), at the edge of your fish fillet where the skin and fish meet and line up your knife. Get a good grip on the fish skin with your fingers, and then, while holding your knife at about a 45 degree angle, begin to slowly glide your knife down the fillet to remove the skin. Don't be afraid to really tug on the skin you're holding to keep that leverage. As you get further down the fillet, flatten your knife.
