This is my version of the dish Chop Suey which which has been served frequently as part of our family meals.
Ingredients:
1 lb chicken breast, sliced
1/2 lb shrimps, shells removed, deveined
1 large carrot, sliced diagonally
A bunch of snow peas, ends trimmed
1 red bell pepper, diced
A bunch of mushrooms, sliced
1 broccoli head, florets separated
1 cauliflower head, florets separated
1 small cabbage, leaves shredded
3 cloves garlic, minced
1 white onion, diced
2 tbsps extra virgin olive oil
1-2 tbsps soy sauce
1 tbsp mirin
1 tsp sesame oil
1 tbsp cornstarch
1 cup water
1 cup chicken broth
Salt and pepper, to taste
Instructions:
1. Combine water, soy sauce, mirin, sesame oil, and cornstarch in a bowl. Mix well. Set aside.
2. Season the shrimps with salt and pepper. Heat up the olive oil in a pan and sauté the shrimps until each side changes in color. Remove from the pan and set aside.
3. Sauté the garlic and onion.
4. Add the chicken and sauté until the chicken turns light brown.
5. Add the mushrooms and chicken broth. Cover the pan and let simmer for a while.
6. Add the carrots, bell peppers, snow peas, cabbage, cauliflower, broccoli, and the mixture made in #1. Mix well. Cover the pan and let simmer until the steam cooks the vegetables in the desired texture.
7. Add back the shrimps and stir. Let simmer for a while before serving.
