Each package of pork shoulder butt from Costco has 2 shoulders, and we're going to split them into two. We'll end up with 4 pieces of pork that each weigh about 8 - 10 pounds.
I'm not a butcher, but since this is the most economical way to buy quality pork, I'm willing to take a little time - this takes less than 10 minutes - to trim up the pork shoulder into portion sizes that are more easily cooked at home.
