Vegan Spaghetti Bolognese - Healthy High Protein Recipe

Vegan spaghetti bolognese
Ingredients:
2 cloves garlic
2 onions
2 cups celery
2 cups carrot
1 1/2 cups water
2 cups mushrooms
1 cup red wine
700g tomato sauce
basil
1 tbsp cinnamon
rosemary
olive oil
salt
soya mince 200g soaked in hot water for 20 min)
spaghetti 500g
Before you do anything you need to make sure that your soy mince is soaked in hot water for about 15-20 minutes until it softens. set that aside. When that is done you can go ahead and add olive oil onions and garlic into your pan and stir. Let that cook for 5 minutes, stirring occasionally until the onions are nicely cooked and you can smell the garlic. Then add the mushrooms, carrots, celery Plus 1 ½ cups of water and stir. Cover the pot with the lid and let it cook for about 10 minutes. After 10 minutes Add 1 cup of red wine and 700g of tomato sauce. Stir that up until the wine, tomato sauce and vegetables are nicely combined and then you're going to go ahead and add the soy mince. Once that is done you can add any kind of herbs/spices that you like. Today I'm using fresh basil, rosemary and then you can go ahead and add the himalayan salt and cinnamon. Once you're spices are in you're going to let that cook for 30 min. At this point its going to look as though your sauce is a soup but the trick is to cook the sauce uncovered for about 30 minutes and this well help cook down the water. After 30 minutes you should have a nice thick Bolognese sauce like this. When
the Bolognese is almost ready, you can go ahead and cook your spaghetti according to the package. All that's left to do now is plate your delicious spaghetti Bolognese for you and for the lucky person who is dining at your place. And don't forget to top of your spaghetti with vegan cheese and nutritional yeast!
