➤ Shahi Paneer with white gravy🪔✨🎊
- 1/4 cup whole almonds, 1 tspwhite poppy seeds, 300gm paneer, 3 to 4 garlic cloves, 1/2 inch fresh ginger, 1 onion
- 1 tsp fennel seeds, ½ tsp cumin seeds, 2-3 green cardamoms, 1½ tsp salt, ½ tsp sugar, 1 tsp dried fenugreek leaves, ½ tsp coriander powder, ½ tsp fennel powder.

Begin by soaking almonds in warm water for 15 minutes and poppy seeds in a separate bowl. Peel and set aside the almonds. Roughly chop garlic and ginger, and slice onions and paneer. Heat oil in a pan, add fennel seeds, green cardamoms, and cumin seeds, followed by garlic and ginger. Add onions, season with salt, and stir for 2 minutes. Sprinkle powdered spices and crushed dried fenugreek leaves, sauté for an additional 2 minutes. Drop in peeled almonds and 1cup of water, boiling for 5 minutes. Blend the mixture with soaked poppy seeds until smooth. In a pan, heat ghee, add the puree, stir, and introduce sugar and paneer pieces. Cook for 5 minutes, adjusting salt if needed. Finish by pouring in heavy cream and cooking for an additional 2 minutes. Serve warm with your preferred Indian bread or rice.

➤ Mexican Bhel🪔✨🎊
- Finely chopped veggies like onion, capsicums any color, green chillies, corn, olives (optional), jalapeños instead of green chillies(optional), crushed nachos, tomatoes
- Black salt, red chilli powder, chaat masala and ketchup - all as per taste

➤ Bajra Cookies🪔✨🎊
- In a bowl, combine 1 cup pearl millet flour (Bajra/kambu), ¼ cup ghee (plus additional as needed), ¼ cup of sugar or less, ¼ teaspoon salt, a cardamom and ¼ teaspoon baking powder.

You can use either powdered sugar in this recipe. Remember, baking powder and baking soda are not the same. If the dough is hard to roll without cracking, add a bit more ghee. Feel free to sprinkle some pistachios on top, for a nice garnish

➤ No COOK laddoos🪔✨🎊
Combine ½ cup desiccated coconut, roughly ⅓ cup almonds (which is half of ¾ cup), 7 to 8 dates, ½ to 1 tbsp dried rose petals, ½ tbsp flax seeds, and ½ to 1 tsp rose water. Top with powdered rose petals, pistachios, and coconut as desired.

In equal quantities, combine melon seeds and sesame seeds. Use half the amount for peanuts and poha. Dry roast each ingredient separately without oil or ghee. Store the roasted mixture in the fridge for up to 1 month.
