Ingredients
1 Cup Almonds
1 Cup Pecans
1 Cup Walnuts
1/4 Cup Chia Seeds
1/4 Cup Hemp Seeds
1/2 Cup Pumpkin Seeds
1/2 Cup Flax Seed Meal (or ground flax seed)
1/2 Cup Unsweetened Shredded Coconut
1 tsp Cinnamon
1/2 tsp Clove
1/2 tsp Ginger
1/2 tsp Allspice
1 tsp Celtic Sea salt
1 Egg Whits (if you like your granola extra crispy, you do not need to add this)
2 tsp Vanilla
1/4-1/2 Cup Coconut oil (use a little extra if it’s not wet enough)
1/2 Cup Keto Maple Syrup
6 Tbsp Allulose
( if you don’t care about the carb count, you could INSTEAD add 3/4 of a cup total of honey and maple syrup mixed) Taste the sweetness level and make sure it’s how you like it. Go slow as you’re adding it in so you don’t over sweeten it.
Optional ingredient
You could add a few scoops of protein powder to make this have some more protein
Instructions
Start by chopping up your nuts you could either do it by hand or in a chopper start with the almonds because they are the hardest nut. Make sure to not make it into powder and leave some chunks in it.
Then chop up your pecans and walnuts. They will not take as long to chop since they are so soft.
Combine all the other ingredients and mix together
Warm up your coconut oil and mix in all of the wet ingredients making sure to scrape the bottom so no dry ingredients are missed in the mixing process
Place on a parchment line baking sheet make sure not to overcrowd the pan
Bake in the oven at 275° for about 40 minutes turning and flipping everything halfway through
