The 50% Gray layer for dodging and burning is not stupid, or archaic, or unnecessary... regardless of what you hear. There is clearly a place for it in your workflow.
However...
The way you dodge and burn is YOUR personal preference. At the end of the day, do what is best for you. Do what you are most comfortable with. But, just make sure you are doing it for a reason!
