Recipe:
Filling:
5 cups cherries, pitted
⅔ cups sugar
2 tablespoons cornstarch
¼ teaspoon salt
2 tablespoons lemon juice
1 teaspoon vanilla
¼ teaspoon almond extract
Topping:
1 cup flour
½ cup sugar
1 teaspoon baking powder
¼ teaspoon salt
2 tablespoons butter, cold
⅓ cup milk
1. For the filling, add pitted cherries to a pot along with the sugar, cornstarch, salt, lemon juice, vanilla and almond extract.
2. Bring to a boil and simmer for 5 to 10 minutes or until the cherries have softened and the mixture has thickened.
3. Add the filling to an 8 inch baking dish.
4. For the topping add the flour to a bowl along with sugar, baking powder, salt and cold butter. Mix the butter in with your hands until incorporated into the flour.
5. Add the milk and stir until everything is combined.
6. Add spoonfuls of the topping evenly over the top of the cherry filling.
7. Bake in the oven at 400°F for 20-25 minutes or until the topping is golden brown.
8. Let cool for 30 minutes to set. Serve warm or cold. Best served with ice cream!
